Storage Tip: Store the zucchini in a perforated plastic bag in the vegetable bin of your fridge or in a plastic container covered with a towel and then with a lid. Don’t let moisture bead up on them.

Tasty Tidbits: Zucchini is a specific variety of summer squash that is green. The two are so versatile it would be hard not to find a way to use them that you’ll enjoy. You can use them in stir-fries, sautes, stuffed, grilled, in frittatas/eggs, soups, pastas, and summer stews. You definitely have our permission to make zucchini bread, cake, or muffins using yellow summer squash; you won’t be disappointed, especially with the recipes that include chocolate. Last year’s new favorite way to use them was to make them into noodles, saute with garlic, and serve like spaghetti with red sauce or Alfredo. The noodles, slices or chunks freeze very well, staying nice for several months without blanching first.
