Storage Tip: Wrap in paper towel to absorb moisture, then put in plastic bag and refrigerate. The longer you keep it, the more bitter it will turn.

Tasty Tidbit: Eggplants can be broiled, grilled, fried, roasted and sautéed. Use it for dips, pasta, soups, stews, casseroles, gratins and purees. Large pieces can be rolled or layered, and whole eggplants can be stuffed. You may also eat the skin on eggplants, but the older it gets the more bitter it will taste and may require peeling.
